Asian Bison Barbeque (with SHAVED bison)

Mix all ingredients for marinade. Marinate the meat at least 2 hours - Either fry in pan, or grill slices - serve with rice

 

Grilled Bison with Shallot-Thyme Barbecue Sauce (Use a Bison steak- Ribeye or NY strip loin)

Mix A-1 Sauce, ketchup Worcestershire, shallots, mustard, thyme and lemon Juice in a saucepan. Heat, and whisk in butter. OK to make ahead and reheat. Sear steaks in very hot skillet or over hot grill: 2-½ minutes ea. side for 1" thick or 4 ½ minutes each side for 2" thick steaks. DO NOT OVERCOOK BUFFALO. Slice steaks and drizzle warm sauce over steak or serve on the side as a dipping sauce.

 

Crock Pot Buffalo Burgundy (Use Kabob meat or Stew Meat)

Place following ingredients in crock pot:

Mix together: ½ c. bread crumbs and ½ c. flour.

Add to the mixture to the pot and Stir contents. Cook LOW for 8 hours. Serve with your favorite noodles

 

Vegetable-Buffalo Soup - Hearty and flavorful (Use GROUND bison)

Perfect for a main dish Serves 6

Heat oil in large saucepan. Sauté onion for 3 minutes. Add ground bison. Cook. Combine eggplant, garlic, carrots and celery with ground bison and onion. Blend in tomatoes and beef broth. Add salt, sugar, pepper and nutmeg. Cover and simmer for 30 minutes. Soup can be prepared to this point in advance, then reheated to compete cooking Stir in macaroni and parsley; simmer 10 minutes, or until macaroni is tender. Garnish with Parmesan cheese.

 

Bison Chili Serves 10 (Use GROUND bison)

 

Sauté bison, garlic, onion, pepper and celery. Combine remaining ingredients in large pot. Bring to boil and simmer covered for 2 - 3 hours. Can easily be re-heated for even more flavor.
